London’s traditional hand-crafted whisky
Founded in 2015, the London-based Bimber Distillery produces a range of award-winning, fruit-forward, small-batch single malt whiskies, passionately handcrafted using traditional methods.
Bimber makes its whisky using barley grown on its own single farm in Hampshire. The barley is traditionally floor-malted, hand-mashed, and slowly fermented over seven days in wooden washbacks handcrafted at the distillery’s own cooperage.
The distillery uses direct fire to heat its small copper pot stills and matures its spirit in the finest American oak and Sherry casks sourced from the USA and Europe—along with other carefully selected casks that provide the flexibility to create unique flavours.
Bimber produces a range of renowned single cask collections, including The Spirit of The Underground and Shoulders of Giants. It also owns the Dunphail Distillery in Speyside, which opened in 2023 and follows the same handcrafted, traditional ethos in producing its single malt Scotch whisky.
