A new era in Tasmanian Whisky

At Callington Mill Distillery we craft world-class single malt whisky using the finest Tasmanian ingredients and pristine waters at our historic Callington Mill in Oatlands, Tasmania. The distillery is set on the original Callington Mill site, where heritage building meet modern architecture and a state of the art distillery.

There is no expense spared at our distillery to deliver what we believe is the unprecedented quality and flavour not only in Australian whisky, but measures up to the global whisky industry. Using local Tasmanian grown and malted barley and a lager yeast to drive flavour from fermentation, through distillation on our Kolmark Tasmanian designed and produced stills through to maturation in sherry and port barrels sourced directly from leading producers in Spain and Portugal respectively, ensures our whisky delivers on the flavour front every time.

Callington Mill delivers on sustainability areas in our production – heat exchange to reduce clean energy consumption, 100% of distillery waste, including barley which goes to farmers to feed sheep and cattle, along with and water (which is treated) from mashing which is redistributed to hydrate crops, and our eco friendly packaging deliver on our sustainable values.
