London's traditional craft whisky

Founded in 2015 and based in London, Bimber Distillery produces a range of award-winning, fruity single malt whiskies in small batches, handcrafted with passion using traditional methods.

 

Bimber produces its whisky from barley grown on its own farm in Hampshire. The barley is traditionally malted on the ground, mashed by hand, and slowly fermented for seven days in wooden washbacks, which are handcrafted in the distillery's own cooperage.

The distillery heats its small copper stills with direct fire and matures its whisky in the finest American oak and sherry casks from the USA and Europe – along with other carefully selected casks that offer the flexibility to create unique flavors.

Bimber produces a number of renowned single-cask collections, including "The Spirit of The Underground" and "Shoulders of Giants". It also owns the Dunphail Distillery in Speyside, which opened in 2023 and follows the same artisanal, traditional ethos in the production of its single malt Scotch whisky.
